Manolis was born in a rural family in the village of Panethimos of the Municipality of Kolymbari, West Crete (a geographical region recognized by the EU as a protected designation of origin for olive oil). The area is historically associated with olive growing, as evidenced by the existence of olive trees dating back more than 2,500 years (Vouves olive tree, etc.). From a very young age he actively participated in the cultivation and in all processes of olive and olive oil. Later he became a lover of the product. Since 1992 he has been dealing exclusively with the care of olive trees and the production of olive oil. The philosophy and practices he has served passionately since then are the achievement of high quality and use of innovations. His knowledge in this field is endless and his love for the trees is great. That's why we chose two of his organic farms to become the first to provide us with the fruit for the oil we produce.
